The shading causes the amino acids (Theanine) and caffeine in the tea leaves to increase, while catechins (the source of bitterness in tea, along with caffeine) decreases, giving rise to a sweeter taste. The tea also has a distinct aroma and is used world wide in tea festivals and ceremonies. RahimAliOrganic® Organic Premium Culinary Grade Matcha is made from top quality green tea plants, the Premium Culinary Grade Matcha is grown in direct sunlight up until 7 days before harvest (2nd harvest period) where the leaves are shaded from the sun. It has a slightly stronger flavor than the Premium Ceremonial Grade Matcha . Its mellow and sweet aftertaste lasts long in your mouth. When this matcha is whisked in water, it float on water and produce froth which make it tastes soft, subtle and flavorful.
